I don’t know about you but I’m pretty tired of The Winter That Will Not Rest. It’s been officially spring for a while now and yet I’m still having to wear socks! BOO! I’m optimistic though that maybe, just maybe, April is going to bring us some true spring weather.
With spring comes sunshine,flowers, and of course, Easter. These little Birds Nest Cookies make a cute and fun addition to your Easter table or just for a whimsical spring snack. I made them last year for a little “Pinterest Party” that I hosted and they were a hit. No one has to know how simple they are.
Birds Nest Cookies
1 16 oz package of your choice of candy chips*
3 cups of chow mein noodles
Cadbury Mini Eggs
Melt chocolate slowly on the stove top stirring constantly, or in the microwave. If you go the microwave route, you’ll want to stir about every 30 seconds.
Add in the chow main noodles and stir well to coat the noodles thoroughly.
Drop by spoonful onto wax paper, using your spoon to shape the nest. They don’t have to be perfectly round, mine certainly weren’t.
Let your nests cool, about 10 minutes, then place Cadbury Candy eggs in each nest.
Makes about 30 nests.
*I used a bag of chips that were a combination of chocolate and peanut butter. I didn’t even know such a beast existed but it gave these cookies that wonderful chocolate-peanut butter flavor without having to add peanut butter. Butterscotch chips would be good too!
